I stumbled upon this easy white chicken chili recipe on an evening I was craving Mexican and needed something easy and delicious for the whole family. This recipe is perfect, you can make it in a dutch oven if you are home, or if you’re on the go for the day throw everything into the crock pot<\/strong>. The best part of this delicious recipe is it is zero points!<\/p>\n<\/p>\n

\n- 2 lbs boneless skinless chicken breasts <\/strong>(when I am tight for time I use rotisserie chicken)<\/strong><\/li>\n
- 2 tsp cumin<\/li>\n
- 1 tsp garlic powder<\/li>\n
- 1 tsp onion powder<\/li>\n
- Salt and pepper<\/li>\n
- 14 oz. great northern beans<\/strong> or navy beans or your favorite white beans <\/strong>drained and rinsed<\/li>\n
- 14 oz. cannellini beans or pinto beans <\/strong>drained and rinsed<\/li>\n
- 14 oz. canned corn, drained and rinsed<\/li>\n
- 16 oz salsa verde<\/strong><\/li>\n
- 4 cups chicken stock or fat-free chicken broth<\/strong><\/li>\n
- if you are not trying to follow a Weight Watchers recipe use can add a 1\/2 cup of heavy cream or a splash of milk<\/strong> to make a richer chili<\/li>\n<\/ul>\n
my favorite way is in a slow cooker. Simply add everything and give it a stir. Cook on low for 4-6 hours. Remove the chicken and ensure it is cooked through and either shred or chop. Return to the slow cooker and stir once more.<\/p>\n
