While there every morning we had a delicious shrimp salad. The best part is when I asked her for the recipe she looked at me like I was crazy!! I guess we all have those regional recipes that are so simple and such a staple that you take them for granted.

As we continued our travels I soon discovered that they served this shrimp salad everywhere and on top of everything LOL!!! Really, on top of bread, rolls, and baked potatoes (My personal fav!!)

Several years later I was telling another friend about this amazing shrimp salad so I emailed my Swedish friend and she was so confused about why I needed a recipe!! (When you see the ingredient list below you will probably understand why she was so confused I kept on insisting on a recipe for something so simple lol)

As of late, I have been following a more keto diet (low carb lifestyle) and this creamy shrimp salad recipe fits the bill perfectly!

Simply mix together all the ingredients except the shrimp. Once mixed then add in shrimp, chill for an hour, and serve!!

- 17 oz cooked shrimp (I prefer wild-caught shrimp cold water salad shrimp) if you can’t find cooked salad shrimp you can certainly use raw shrimp and cook it)

- 3 tablespoons crème fraîche (can substitute with sour cream)

- 3 tablespoons mayonnaise

- 3 tablespoons or a small bunch of fresh dill chopped

- 1 tablespoon red onion finely chopped

- 1 teaspoon lemon juice

- Salt and black pepper to taste

- the slight drizzle of olive oil (this is optional. I find the extra fat just opens the flavors)

Simply mix together all the ingredients in a large bowl except the shrimp making a salad dressing. Once mixed then add in shrimp to the rest of the ingredients, chill for an hour, and serve!! You can enjoy it right away but it’s even better the next day

I love serving it on seed bread (LINK) with sliced boiled egg!!! it’s so good in a “cup” made from a piece of butter lettuce

I have even altered this to make a lighter recipe by adding in a splash of apple cider vinegar and a smidge of dijon mustard. This change-up combined with the juicy shrimp makes such a great summertime cold shrimp salad recipe.

Another alteration is to add sliced cherry tomatoes and a splash of lime juice for a great summer salad or even use old bay seasoning for a cajun shrimp salad, there are just so many different ways to take this fresh shrimp salad into fun and tasty directions!! Its such a great recipe
